Ingredients:
- 6 chicken thighs with skin
- 1 bunch of cilantro
- 6 cloves of garlic
- 2oz of olive oil @kasandrinos
- Juice from 2 limes
- 1 tsp cumin
- 1 tsp oregano
- Hot peppers (optional)
- Sea salt to taste
- Black pepper to taste
Instructions:
- Debone the chicken thighs while keeping the skin on.
- Add all ingredients to a food processor and blend on high for about 30 seconds until all ingredients are fully processed and set aside.
- Cut chicken into 1-inch cubes using cooking scissors.
- Add 1 tbsp of Chimichurri sauce to the skillet on medium high.
- Add chicken pieces to the skillet and stir-fry.
- Add the rest of the sauce, tossing the chicken with tongues and thoroughly coating it with the sauce.
- Cook for about seven minutes, then transfer an air fryer to make it extra crispy.
