Ingredients: 

  • 6 chicken thighs with skin 
  • 1 bunch of cilantro 
  • 6 cloves of garlic 
  • 2oz of olive oil @kasandrinos 
  • Juice from 2 limes 
  • 1 tsp cumin 
  • 1 tsp oregano 
  • Hot peppers (optional) 
  • Sea salt to taste 
  • Black pepper to taste

Instructions: 

  1. Debone the chicken thighs while keeping the skin on. 
  2. Add all ingredients to a food processor and blend on high for about 30 seconds until all ingredients are fully processed and set aside.
  3. Cut chicken into 1-inch cubes using cooking scissors. 
  4. Add 1 tbsp of Chimichurri sauce to the skillet on medium high.
  5. Add chicken pieces to the skillet and stir-fry. 
  6. Add the rest of the sauce, tossing the chicken with tongues and thoroughly coating it with the sauce.
  7. Cook for about seven minutes, then transfer an air fryer to make it extra crispy.
