Ingredients:
Seasoned Sausage:
- 1lb Chicken Sausage Links
- 1 Tbsp Extra Virgin Olive Oil
- 1 Tbsp Thyme
- 1 Tbsp Paprika
- 3 Cloves Garlic, diced
- 1 tsp black pepper
- ¼ tsp sea salt
“Stuffing”:
- 4 cups riced cauliflower
- 3 stalks of celery (~ 4oz.)
- 2 whole Carrot sticks (~5oz.)
- ½ cup Chicken Stock
- 4 Tbsp Olive Oil
Instructions:
1. Take the chicken sausage links and cook in a non-stick skillet lightly sprayed with olive oil on medium high for 2 minutes per side and then set aside. Slice the sausages into ~ ½” pieces.
2. Take 1 Tbsp of olive oil and sauté diced garlic for 30-45 seconds in a skillet on medium high. Add the sliced sausage and stir-fry with seasonings for 3-5 minutes until the sausage pieces are lightly browned and then set aside.
3. Take an extra-large skillet and add 4 Tbsp of olive oil and sauté celery, carrots, and riced cauliflower on medium high for 2-3 minutes. Stir-fry contents together and then add the seasoned chicken sausage. Add the chicken stock and stir-fry contents together for 30-60 more seconds. Remove from heat and cool for 3 minutes before serving.
